¼ cup milk
1 cup granulated sugar
Tiny Pinch of Salt
1 ½ cups all –purpose flour
2 pounds fresh pears, bosc if available, otherwise D’Anjou or Bartlett
Butter for greasing the pan & dotting the cake
½ cup dry, unflavored bread crumbs
1 doz cloves, optional
9 inch round cake pan
Preheat over to 375 degrees
Beat eggs & milk together in large bowl
Add sugar and a tiny pinch of salt, continue beating.
Add the flour, mixing it in thoroughly to produce a compact cake batter.
Peel, core & slice the pears, about ¼ inch thick
Add pears to cake batter, mix gently by hand to distribute them evenly
Coat the pan generously with butter. Sprinkle with bread crumbs. Rap sharply on bottom of inverted pan to shake loose excess bread crumbs
Place the batter into the pan and level it off with spatula. Make numerous small hallows on top with fingertip and fill them with small bit of butter
Stud the cake top with optional cloves, distributing evenly
Place cake in upper third of preheated oven. Bake for 50 minutes or until top has become lightly colored.
While it is still lukewarm, carefully loosen tart from pan, lift with spatula and transfer to platter. Best served warm or room temperature.
2 pounds of peaches, pealed, and sliced
1 cup brown sugar
3 oz white wine
1 oz white balsamic vinegar
Dash cayenne (if desired)
2 cups half and half
1 cup water
Sliced almonds (optional)
Simmer water, wine, vinegar, peaches, sugar, and spices for 10 minutes.
Carefully remove from heat and using CAUTION blend with half and half in blender until really really smooth.
Adjust the seasoning and sugar to taste.
Refrigerate for an hour before serving.
Add sliced almonds as garnish just before serving (optional)
Store left overs in refrigerator in airtight container
8 pounds of blueberries
2 cans crushed pineapple
6 medium peaches, peeled & diced
1 small red onion, finely chopped
3 jalepenos, finely chopped
cilantro, to taste
sea salt, to taste
2 cups crushed strawberries
2 cups sugar
Boil for 15 minutes, stir constantly
Remove from heat
Add 3 oz package of lemon jello, stir until powder is dissolved.
Let the jam cool before loading up your toast, PB&J, or English muffin
1 cup skim milk
1 cup strawberries, rinsed & stems removed
½ cup low fat or fat free yogurt
3-4 ice cubes
Mix in blender until ice is crushed and beverage is smooth.
Pour into glass and enjoy!
